One of my friends is scared to send emails because she thinks that there are people looking through each email and things like that. She is scared that someone is going to look through her email and see if there is anything illegal there. So just to clarify for her, are there any people out there that are hired by email companies to look through emails? (I don’t think there are because that is an invasion of privacy) (sorry if this sounds paranoid)

She is correct in one sense. There is no inherent right to privacy on the internet. Once you post something, you lose all control over it. She could email it to a friend and that friend might hit REPLY ALL or FORWARD. Her email could end up going to 1,000 people in 2 minutes.
Our main protection is that there are so many billions of emails that no one has the time to read even 1% of them. Tell her to send her mail. But never send anything that would embarrass you if it showed up on the front page of the newspaper.
